Satisfying customers at 35,000 feet would test the world's best restaurants: ingredients don't behave as they do on the ground, flavours are lost, and we only have two-thirds of our taste and smell functions. So it might be understandable if an airline concentrated on simply not offending passengers with its food service. But American has chosen a different route.
